Tomato Basil Soup

"This recipe is a new take on the old Southern tomato soup...it doesn't contain potatoes! Very yummy, and it can make a full meal with a nice grilled cheese sandwich. ** Note: Prep time includes cooling time before pureeing."

  • In a large saucepan over medium heat, saute the onions and garlic in butter until clear and softened. Add the salt, pepper, and 3 tbsp of the sugar. Cook until the sugar is dissolved, about 5 minutes.
  • After 2 minutes, add the tomatoes and a dash of sugar and cook for 5 minutes. Add the water. Simmer for 15 minutes.
  • Set the soup aside to cool. When cooled, puree the soup in a blender. Return the soup to the stove, simmer 5 minutes, and then add the cream. When heated through, sprinkle the basil for garnish.

  1. I love a good tomato soup and this was both delicious and easy! I did cut some fat by only using 3 tbsp of butter ans only 1/2 cup cream, but otherwise stuck to the recipe. I thought it was perfect. I'll be making this again. Thanx!
     
  2. I really enjoyed this soup. The flavor was delicious and the soup was very fast to make. My can of tomatoes was 28 oz so I cut back on the water. I put in 2 cups only and it was a very nice consistency. I found the sugar was the right amount, it added a very nice but not too much sweetness. Had it for lunch with my friend and froze the rest. Thanks for sharing breezermom, this is a keeper. Made for Holiday Tag '09
     
  3. Sure did enjoy this soup/bisque! I made it with the last of my garden tomatoes, and I reduced it by half. I will not do that again! This was hearty and delicate all at the same time. The sugar provided a nice sweetness, while cutting back on tart-ness. I pureed mine with a hand blender (boat motor) and also ran it through a strainer, as I like a smooth soup. I will tuck this away in my "best of" cookbook, and make it again this winter! Perfect on a cold day, this is filling and tasty! Thanks for sharing, breezermom!
     
  4. Followed instructions as listed except for using only 1/4 cup cream as that is all I had left. Nice tasting soup, thanks for sharing your recipe.
     
  5. This soup had a really nice flavor. I thought that it was a little too sweet so next time I'll cut back on the sugar and the water to make it a little thicker. Thanks breezermom for a new quick soup. Made for Newest Zaar Tag.
