Smoked Sausage Jambalaya

"This is a simplified recipe of Jambalaya from Sara Moulten's show, "Sara's Secrets". My family really enjoys this and I find it quite easy to make when the craving for Jambalaya surfaces."

  • Cut sausage into 1/4-inch-thick slices and chop onion, bell pepper, and celery.
  • In a dry 2 to 2 1/2-quart heavy saucepan brown sausage over moderately high heat, stirring frequently, and with a slotted spoon transfer to paper towels to drain.
  • Pour off any fat from pan and in pan cook vegetables in oil over moderate heat, stirring occasionally, until onion is softened.
  • Stir in rice, broth, and cayenne and bring to a boil.
  • Cover pan and cook rice over low heat 20 minutes.
  • Remove pan from heat and let rice stand, covered, 5 minutes.
  • Thinly slice scallions.
  • Fluff rice with a fork and stir in sausage, scallions, and salt and pepper, to taste.
  • Yield: 4 servings.

  2. I loved this recipe when it was a Food Network recipe. I saved it in my recipe box on that site, but it was mysteriously replaced.....So happy to find it here.. It is wonderful, however, I ALWAYS use turkey smoked sausage.
     
  3. We had a leftover veggie tray and little smokies from New Year's and since I just can't let good food go to waste, we had to try this one out! Believe it or not, it turned out pretty well...we ended up adding some cajun seasoning and sauteing the veggies with a little bit of beer for more flavor. For a weird, mixed-up leftover meal, this turned out pretty well...but next time we'll use real sausages! :)
     
  4. This is soooo delish! I didn't add celery (just because I didn't have any), but added some chopped zucchini I had instead. Also added some emeril's essence (about 1/2 T.) to it. Turned out EXCELLENT!
     
  5. I can't believe I have not posted a review of this recipe! I've made it MANY times--everyone loves it! I usually only use 1/2 pound of smoked sausage and add a little cajun seasoning, but otherwise follow the recipe. My kids, ages 4 & 5.5 now, really like this. I think it's the lively colors in the dish that entice them to eat more! Also, it's GLUTEN FREE!! BIG GRIN for that! (daughter needs GF food) Thank you for posting this!

  1. This is soooo delish! I didn't add celery (just because I didn't have any), but added some chopped zucchini I had instead. Also added some emeril's essence (about 1/2 T.) to it. Turned out EXCELLENT!
