Simple but Delicious Chicken and Dumplings

- 3 cups Bisquick baking mix
- 1 cup milk
- 4 chicken breasts, with bones and skin
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon poultry seasoning
- 1 teaspoon salt (yes another)
directions
- Place the chicken breasts in a large pot with a lid. Cover with water and bring to a boil. Add one teaspoon salt and simmer covered until chicken is cooked through.
- Remove chicken breasts and allow to cool. Skim off any residue or fat from the broth but leave water in the pot.
- In a medium large mixing bowl, stir remaining ingredients until just combined.
- Drop mixture by heaping tablespoons into hot broth. Cover and cook 10 minutes.
- While cooking, remove chicken from bones, discarding skin and bones. Tear chicken into bite size pieces.
- Remove the cover, put in the chicken and cook uncovered 10 more minutes.
- Serve hot in bowl and be sure to ladle in some of the pot liquor for your big fluffy dumplings.
