A super-fast salad/side dish that's a great compliment to a sweeter main course. Also great for potlucks.
- 2 cans peas, drained
- 1 onion, finely chopped
- 6 eggs, hard boiled and chopped
- 1⁄4-1⁄3 cup Miracle Whip
- Mix first three ingredients.
- Add Miracle Whip until desired consistency.
- chill, if desired.
I love love love this! My mom made this when I was younger, but now I do it! I like to use frozen peas and mayo instead of Miracle Whip. Also, I never thought of using eggs. We always made it with crispy bacon crumbles...yum! I will have to try the eggs one time. Fabulicious recipe!

A wonderful recipe for a side dish. I made it ahead of time & think it gets better after some standing time. It was great to have a refreshing vegetable ready to serve & it was praised by all. This receipe is definitly a keeper!
