ingredients
- 14.79 ml olive oil
- 1 medium yellow onion, diced (about 3/4 cup)
- 1 garlic clove, minced
- 1 medium red pepper, finely diced (about 1 cup)
- 1 bay leaf
- 29.58 ml chopped fresh flat-leaf parsley
- 9.85 ml chopped fresh thyme
- 907.18 g lean ground beef
- 2 large eggs, lightly beaten
- 177.44 ml dry breadcrumbs
- 236.59 ml ketchup
- 14.79 ml Worcestershire sauce
- 9.85 ml kosher salt
- 4.92 ml fresh ground black pepper

- Preheat the oven to 350°. Line a baking sheet with parchment paper. Spray lightly with oil.
- Heat the olive oil in a medium skillet over medium heat. Sauté the onions, garlic and bay leaf until the onions are tender, about 3 minutes. Add the red pepper and cook until the red pepper is tender, about 5 minutes. Stir in the parsley and thyme and cook for another 2 minutes. Remove pan from the heat and let the onion mixture cool. Discard the bay leaf.
- In a large bowl, combine the beef, eggs, bread crumbs, 1/2 cup of ketchup, the Worcestershire sauce, salt, pepper and the cooled vegetables. Use your hands to mix everything together.
- Transfer the mixture to the center of the baking sheet and form into a loaf. Coat the meat loaf with the remaining 1/2 cup ketchup.
- Bake for 1 to 1 1/2 hours (depending on the shape of your loaf), until the meat loaf is firm. Let set for about 5 minutes before slicing.

Best meatloaf I have ever made. I'm not a fan of garlic so I left that out. The only other tweak I made was that I used 1 1/2 pounds of ground beef and 1/2 pound of ground pork. In my opinion the red pepper is the star of this recipe as far as the flavor. Second is the bay leaf, so don't leave that out. I put the ketchup on top right away when I first put the loaf in the oven, as the recipe instructed, and it did fine.

What a delicious recipe!!! I followed the instructions only like breezermom I add the ketchup to the top the last 20 minutes of baking. I did make the recipe into two loaves so my DD and DH and I would have our dinner with baked potatoes and green beans. Definately will make this again. Made for Spring PAC 2012.

I am a big fan of meatloaf so was anxious to give this a try - I did it two ways in different weeks - week one I substituted 1 XL can of petite diced tomatoes for the ketchup (ketchup seemed so wrong in a recipe with nice fresh spices - I reserved the liquid and added small can of tomato paste with salt & pepper & spread on top in the last 15 minutes of cooking - the rest I followed and it was delicious but still not what I would have expected so it got a 3 -- <br/><br/>the next I followed this (as revised above) TWO & 1/2 LBS lean ground chuck and added my normal meatloaf ingredients - I use 3/4 C each of onions, mushrooms and celery & 1/2 C each of green & red bell peppers all finely diced & sauteed with the spices in a tad of olive oil til the onions are clear - then just mix it all up together and continue as directed - it is a hearty "meal for a man" and just flat awesome. - I've tried Cajun, Chinese, Hungarian, all manner of mixes for meatloaf - and frankly love them all - I think if you grew up poor like I did your Mamas stretched the food budget with meatloaf and if yours was like mine she was always trying to add just a little something to change it up bit to please her family - we have become even more brave with a plethora of ideas to try - and have taken that "changing it up a bit" to a whole new level - our Mamas would be so proud! Thanks for the recipe - loved the spices so much!

This is, to me, the ABSOLUTELY BEST meatloaf, especially with a couple of modifications that I have made. First of all, I used 1 lb ground beef and 1 lb pork sausage and mixed it all together. The other change was, instead of spreading the ketchup on top at the beginning, I mixed about 3/4 cup ketchup with about 1 TBS white wine vinegar and spread it on top at the END of the regular 1 1/2 hour cooking time and cooked an additional 15 minutes. DELISH!!

I am a busy mom both with stuff at home and my work. My kids and husband love to try new creations so they are right at home with my love of recipes. It is fun to make something and try several different ways at it. I love to try different enchilada recipes, recipes for various ice teas, and anything that gets food on the table on the weeknights. Restaurant recipes for the weekends are another favorite.
