  • Wash and dry chicken. Season with salt and pepper.
  • Put flour, salt and pepper in a medium paper bag, shaking to mix.
  • Add half the chicken pieces, shaking gently to coat chicken. Remove chicken to rack and coat rest.
  • Fill cast iron skillet with enough oil to reach 1/4 inch. Heat over medium-heat. Place chicken in oil, cooking until golden brown. Turn and brown other side.
  • Pour oil off and lower the heat to medium-low. Partially cover skillet and cook for 40 minutes more.
