- 907.18-1360.77 g lean pork roast
- 907.18-1360.77 g lean beef roast or 907.18-1360.77 g chuck
- 453.59 g white meat chicken (optional)
- 1 large onion
- 793.78 g can tomatoes
- 1 can white corn
- 1 can creamed corn
- 236.59 ml cider vinegar
- 29.58 ml black pepper
- 14.79 ml ground red pepper
- 7.39 ml crushed red pepper flakes
- 14.79 ml salt
directions
- Cut meat into large chunks.
- Place in a heavy pot and add water to barely cover.
- Simmer more than an hour.
- When the meat is very tender, drain and reserve any broth.
- Grind the meat with a coarse hand grinder or chop finely.
- (Using a food processor destroys the texture.) Grind one large onion.
- Place onion and the meat back into the pot and add one large can of tomatoes-juice and all.
- Add corn, vinegar and seasonings.
- Simmer a few minutes.
- Add the reserved broth to the meat until it reaches the consistency of stew.
- Serve it over white rice or bread with dill pickles on the side as a condiment.

I cut this in half because the quantity is so large. I thought it was delicious. It took a tremendous amount of convincing to get my son and husband to try this, because they thought it looked terrible (men are so weird), but once they did, they also loved it. I served it over rice, although personally I preferred it on its own.

cut out the corn. boil diced potatoes & chopped onions in meat stock. add a little black pepper, dry mustard. grind meat, onions & potatoes. add tomatoes. add half stock & half tomato juice til you reach the consistency you like. keep it loose & let it thicken as tou cook. stir, stir. stir. at least 2 hrs or use a pressure cooker. if it sticks , it will burn & you might as well toss it out

I live in Las Vegas. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember.
