This spiffed up rice side dish is so pretty and tasts so good! Great way to use up leftover rice.

- 3 cups cooked rice
- 1 (10 ounce) package frozen spinach, thawed and squeezed dry
- 1 cup shredded cheddar cheese
- 1 cup light cream
- 1⁄4 cup chopped onion
- 2 tablespoons butter
- 1 teaspoon salt
- Combine all ingredients.
- Put into a greased 1-1/2 qt casserole dish.
- Cover and bake at 350* for 25 minutes.
A very nice rice dish. The spinach and cheddar cheese combined with the cream made a very nice sauce. This recipe is easy to make, lovely to look at, and very tasty. Thanks, for sharing this recipe....it will be on my table again!

This is a quick and easy way to use up leftover rice. I used half & half and it worked wonderfully. Next time we'll add more cheese. Thanks for sharing the recipe. :)
