  • Combine first 7 seasonings in a small bowl and set aside.
  • Coat a frying pan with oil spray and place in chicken and bay leaves.
  • Cook over high heat until meat is browned.
  • Stir in seasoning mix.
  • Add onion, capsicum, celery and garlic, and stir.
  • Add margarine and stir until melted.
  • Cook for about 10 minutes, stirring and scraping bottom of pan occasionally.
  • Add chicken stock and stir.
  • Heat until boiling.
  • Add rice and stir thoroughly.
  • Cover pan and reduce heat to low.
  • Cook until rice is tender.
  • Remove bay leaves and serve immediately.

  1. I used 1 lb ground beef, beef stock and I can diced tomatoes. no bay leaves. Worked great.No its Eddies low down dirty rice.

  4. Really liked this. Have made it twice so far. First time without the meat, and had to subsitute the cayenne with chili powder and halved the quantity as was feeding a toddler, made it less spicy. Very easy to make and fed myself, hubby and toddler. Toddler is a rice addict so perfect! Have also changed veg depending on what Ihad to hand that might work! :)
     
  5. Yum! I really loved the spice combination. The only changes I made were to use around double the quantity of chicken in small pieces rather than diced, and used butter rather than margarine.
