    Brooklyn's Culinary Diva's Note:

I was doing a project on cajun and creole food, so I invested in some help from Susan Merrick who owns and operates cajun-country-foods.com. She helped me out with these recipes!! So I want to thank her!

Wonderful idea to use puff pastry. I had some in the freezer and used it instead of the individual shells. Crawfish tails are $11.00 per pound so I used Crawfish and shrimp. I used oil and butter combo. Did not want to burn my roux. It did not take 1 hour to get the vegetables tender.I used cajun seasdoning instead of cayenne. Great as an appetizer or main dish with a nice salad and garlic bread. :-0
