BBQ Cheddar Chicken Roll-Ups

- 1 large green bell pepper, cut into strips
- 1 large red bell pepper, cut into strips
- 1 large sweet onion, thinly sliced
- 1 lb boneless skinless chicken breast, cut into strips
- 1⁄3 cup barbecue sauce
- 4 (10 inch) whole wheat tortillas, warmed
- 1 cup 2% milk cheddar cheese, shredded
directions
- Cook and stir vegetables in large nonstick skillet on medium-high heat for 3 minutes.
- Add chicken, cook and stir 3-4 minutes or until no longer pink.
- Stir in barbecue sauce; cook on medium heat 3 minutes or until chicken is done, stirring occasionally.
- Spoon chicken mixture down centers of tortillas; top with cheese.
- Roll up; cut in half.
