This was a hit at our house! I had never made a roux for gumbo before so it was quite a lesson in patience but the end product was fantastic! Lots and lots of enjoyment from my family. I did add some file at the end. Thanks for posting!

This was DELISH. This was my first attempt at making gumbo and it came out better than I expected. Even my friends who are New Orleans transplants thought so. Thank you for sharing. It's definitely being added to my cookbook.

THANK YOU VERY MUCH - I grew up in New Orleans but moved to Lafayette while in high school - I NEVER liked Gumbo until I ate it the RIGHT way. Gumbo should definitely not have tomato in it, ever. Cajuns definitely know their gumbo!!! I should know I married a Cajun and had his Cajun dad teach me to make a roux (right & proper) and how to make Gumbo. This is my son's favorite meal and requests it on a weekly basis. This recipe is nearly identical to my father-in-law's. Just had to add that File should be added at the table, never in the pot - Besides a burnt roux, too much file is the quickest way to ruin a good gumbo!!!

This was quite DELICIOUS !! I only made 1/2 recipe, but followed the directions as written. I used chicken thighs and buffalo-green chili sausages, which worked out great. My first time making roux from scratch, and that worked out fine too! DD loved this ~ had 2 bowls, but then, so did I! Thanks so much for posting, this will go into the 2010 faves cookbook. Made for Spring PAC 2010!
